Goan Style Mutton Sukka Biryani

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, finely chopped
  • 3 green chilies, slit
  • 1/2 cup fresh coriander leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1 tablespoon ginger-garlic paste
  • Whole spices: cinnamon, cardamom, cloves, bay leaves
  • Ground spices: turmeric, red chili powder, coriander powder, garam masala
  • Salt to taste
  • 2 cups water

Instructions

  1. Marinate the mutton pieces with yogurt, ginger-garlic paste, turmeric, red chili powder, and salt. Let it marinate for 1 hour.
  2. Heat ghee and oil in a large pot. Add the whole spices and sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Stir in the marinated mutton and cook until the meat is browned.
  5. Add the chopped tomatoes, green chilies, and ground spices. Cook until the tomatoes are soft and the oil separates.
  6. Layer the soaked rice over the mutton mixture. Sprinkle with fresh coriander and mint leaves.
  7. Pour water over the rice, cover the pot, and cook on low heat until the rice is tender and the mutton is cooked through.
  8. Garnish with fried onions and serve hot.
