Goan Style Pork Vindaloo

Ingredients

  • 2 lbs pork, cut into cubes
  • 1 cup white vinegar
  • 8-10 dried red chilies
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1-inch ginger, chopped
  • 8-10 garlic cloves
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp sugar
  • Salt to taste
  • 3-4 tbsp vegetable oil
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 1 cup water

Instructions

  1. In a blender, combine the dried red chilies, cumin seeds, mustard seeds, ginger, garlic, turmeric powder, red chili powder, sugar, and vinegar. Blend into a smooth paste.
  2. Marinate the pork with the prepared paste and refrigerate for at least 4 hours, or overnight for best results.
  3. Heat oil in a pan and sauté the chopped onions until golden brown.
  4. Add the marinated pork and cook for 10 minutes on high heat.
  5. Reduce the heat, add the chopped tomatoes, and cook for another 5 minutes.
  6. Pour in the water, cover the pan, and simmer for 45-50 minutes or until the pork is tender.
  7. Adjust the seasoning and serve hot with steamed rice or crusty bread.
