Goan Style Pork Vindaloo
Pork Vindaloo is a classic Goan dish known for its bold flavors and aromatic spices. This dish has Portuguese origins and is a perfect blend of sweet, sour, and spicy flavors. The tender pork marinated in a tangy and spicy sauce makes it a perfect choice for a hearty meal.
Ingredients
- 2 lbs pork, cut into cubes
- 1 cup white vinegar
- 8-10 dried red chilies
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1-inch ginger, chopped
- 8-10 garlic cloves
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp sugar
- Salt to taste
- 3-4 tbsp vegetable oil
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 cup water
Instructions
- In a blender, combine the dried red chilies, cumin seeds, mustard seeds, ginger, garlic, turmeric powder, red chili powder, sugar, and vinegar. Blend into a smooth paste.
- Marinate the pork with the prepared paste and refrigerate for at least 4 hours, or overnight for best results.
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add the marinated pork and cook for 10 minutes on high heat.
- Reduce the heat, add the chopped tomatoes, and cook for another 5 minutes.
- Pour in the water, cover the pan, and simmer for 45-50 minutes or until the pork is tender.
- Adjust the seasoning and serve hot with steamed rice or crusty bread.
