Goan Style Pork Vindaloo Sliders

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1/2 cup white vinegar
  • 6 cloves garlic, minced
  • 2 inches ginger, grated
  • 2 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • Salt to taste
  • 12 slider buns

Instructions

  1. In a large bowl, mix the pork, vinegar, garlic, ginger, cumin seeds, mustard seeds, turmeric, paprika, cayenne pepper, cinnamon, cloves, and salt. Cover and marinate in the refrigerator for at least 4 hours or overnight.
  2. Heat a large pot over medium heat. Add the marinated pork and cook for 10 minutes, stirring occasionally.
  3. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the pork is tender.
  4. Toast the slider buns and assemble the sliders with the pork vindaloo filling.
