Goat Caldereta (kalderetang Kambing)

Ingredients

  • 2 lbs goat meat, cut into serving pieces
  • 1/4 cup vinegar
  • 1/2 cup soy sauce
  • 6 cloves garlic, minced
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 potatoes, peeled and quartered
  • 2 red bell peppers, sliced
  • 1 cup liver spread
  • 1 cup green olives
  • 3 cups water
  • 1/4 cup cooking oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, marinate the goat meat in vinegar and soy sauce for at least 1 hour.
  2. In a large pot, heat the cooking oil and sauté the garlic, onion, and tomatoes until fragrant.
  3. Add the marinated goat meat and cook until browned.
  4. Pour in the marinating liquid and water, then bring to a boil. Reduce heat and simmer for 1.5 hours or until the meat is tender.
  5. Add the liver spread and stir until well combined.
  6. Add the potatoes and bell peppers, then simmer for another 10 minutes or until the vegetables are tender.
  7. Stir in the green olives and season with salt and pepper to taste.
  8. Serve hot and enjoy with steamed rice.
