Goat Caldereta (kalderetang Kambing)
Goat Caldereta, also known as Kalderetang Kambing, is a rich and flavorful Filipino stew that is a popular dish in Kapampangan cuisine. This dish is made with tender goat meat, cooked in a savory tomato-based sauce with vegetables and liver spread, giving it a unique and delicious taste.
Ingredients
- 2 lbs goat meat, cut into serving pieces
- 1/4 cup vinegar
- 1/2 cup soy sauce
- 6 cloves garlic, minced
- 1 onion, chopped
- 3 tomatoes, diced
- 3 potatoes, peeled and quartered
- 2 red bell peppers, sliced
- 1 cup liver spread
- 1 cup green olives
- 3 cups water
- 1/4 cup cooking oil
- Salt and pepper to taste
Instructions
- In a bowl, marinate the goat meat in vinegar and soy sauce for at least 1 hour.
- In a large pot, heat the cooking oil and sauté the garlic, onion, and tomatoes until fragrant.
- Add the marinated goat meat and cook until browned.
- Pour in the marinating liquid and water, then bring to a boil. Reduce heat and simmer for 1.5 hours or until the meat is tender.
- Add the liver spread and stir until well combined.
- Add the potatoes and bell peppers, then simmer for another 10 minutes or until the vegetables are tender.
- Stir in the green olives and season with salt and pepper to taste.
- Serve hot and enjoy with steamed rice.
