Goat Curry Fiesta

Ingredients

  • 2 lbs goat meat, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and diced
  • 2 cups coconut milk
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 4 cups cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the goat meat to the pot and cook until browned on all sides.
  3. Stir in the curry powder, cumin, turmeric, paprika, and cayenne pepper, and cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and potatoes to the pot, and pour in the coconut milk. Season with salt and pepper.
  5. Bring the curry to a simmer, then reduce the heat to low and cover the pot. Let it cook for 1.5 to 2 hours, or until the goat meat is tender.
  6. Serve the goat curry over cooked rice and enjoy!
