Goat Curry Fiesta
Goat Curry Fiesta is a traditional dish from Montserrat Cuisine that is full of flavor and spice. This hearty and aromatic curry is perfect for a festive gathering or a special family meal.
Ingredients
- 2 lbs goat meat, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 potatoes, peeled and diced
- 2 cups coconut milk
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 4 cups cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the goat meat to the pot and cook until browned on all sides.
- Stir in the curry powder, cumin, turmeric, paprika, and cayenne pepper, and cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and potatoes to the pot, and pour in the coconut milk. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat to low and cover the pot. Let it cook for 1.5 to 2 hours, or until the goat meat is tender.
- Serve the goat curry over cooked rice and enjoy!
