Ingredients
- 2 lbs goat meat, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 2 tbsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- 1 scotch bonnet pepper, chopped (optional for heat)
- 2 cups chicken or vegetable broth
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions
- Season the goat meat with salt, pepper, and 1 tablespoon of curry powder.
- Heat the cooking oil in a large pot over medium heat. Add the seasoned goat meat and brown on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the tomatoes, tomato paste, remaining curry powder, thyme, paprika, and scotch bonnet pepper. Cook for 5 minutes, stirring frequently.
- Return the browned goat meat to the pot and pour in the broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
- Adjust seasoning with salt and pepper, if needed. Serve the goat curry hot with rice or bread.
