Ingredients

  • 2 lbs goat meat, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, whole (optional for extra heat)
  • 1 tsp thyme
  • 1 tsp allspice
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the goat meat over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Stir in the diced tomatoes, sliced carrots, diced potatoes, chopped bell pepper, whole scotch bonnet pepper (if using), thyme, and allspice.
  4. Pour in the water and bring the soup to a boil. Reduce the heat, cover, and simmer for 2 hours, or until the goat meat is tender.
  5. Season with salt and pepper to taste before serving.
