Ingredients

  • 2 lbs goat meat, cut into chunks

  • 1 bell pepper, sliced
  • 2 potatoes, peeled and diced
  • 1 cup beef or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season the goat meat with salt, pepper, cumin, and paprika.
  2. Heat olive oil in a large pot over medium heat. Add the seasoned goat meat and brown on all sides. Remove the meat and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the tomatoes, bell pepper, and potatoes. Cook for a few minutes until the vegetables start to soften.
  5. Return the browned goat meat to the pot. Add the broth and tomato paste. Stir to combine.
  6. Bring the stew to a simmer, then reduce the heat to low. Cover and let it simmer for about 2 hours, or until the goat meat is tender.
  7. Adjust the seasoning with salt and pepper, if needed.
