Ingredients
- 1 head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- Salt to taste
- 8 small tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, turmeric, paprika, and salt until well coated.
- Spread the cauliflower in a single layer on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
- Warm the tortillas in a dry skillet or in the oven.
- Assemble the tacos by filling each tortilla with the spiced cauliflower, lettuce, tomatoes, red onion, and cilantro. Squeeze a lime wedge over each taco before serving.
