Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • Salt to taste
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, turmeric, paprika, and salt until well coated.
  3. Spread the cauliflower in a single layer on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
  4. Warm the tortillas in a dry skillet or in the oven.
  5. Assemble the tacos by filling each tortilla with the spiced cauliflower, lettuce, tomatoes, red onion, and cilantro. Squeeze a lime wedge over each taco before serving.
