Bolas Energéticas de Gofio, or Gofio Energy Balls, are a traditional Canarian snack that is packed with energy and nutrients. These delicious balls are easy to make and perfect for a quick and healthy snack on the go.
Ingredients
- 1 cup of gofio flour
- 1/2 cup of almond butter
- 1/4 cup of honey
- 1/4 cup of shredded coconut
- 1/4 cup of chopped nuts (almonds, walnuts, or cashews)
- 1 teaspoon of vanilla extract
- Pinch of salt
Instructions
- In a large bowl, mix together the gofio flour, almond butter, honey, shredded coconut, chopped nuts, vanilla extract, and a pinch of salt until well combined.
- Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Refrigerate the energy balls for at least 30 minutes to firm up.
- Once firm, transfer the energy balls to an airtight container and store them in the refrigerator for up to one week.
