Gofio Energy Bars (Barritas Energéticas de Gofio)
Barritas Energéticas de Gofio, or Gofio Energy Bars, are a traditional snack from the Canary Islands that are packed with energy and nutrients. These bars are easy to make and perfect for a quick boost of energy during the day.
Ingredients
- 1 cup of gofio
- 1/2 cup of dried fruits (such as raisins, apricots, or dates)
- 1/2 cup of nuts (such as almonds, walnuts, or peanuts)
- 1/4 cup of honey or agave syrup
- 1/4 cup of nut butter (such as almond or peanut butter)
- 1 teaspoon of cinnamon
- 1/4 teaspoon of salt
Instructions
- In a food processor, combine the dried fruits and nuts. Pulse until finely chopped.
- In a large bowl, mix the gofio, chopped fruits and nuts, honey or agave syrup, nut butter, cinnamon, and salt until well combined.
- Press the mixture firmly into a lined baking dish and refrigerate for at least 1 hour.
- Cut into bars and store in an airtight container in the refrigerator.
