Gofio Energy Bars (Barritas Energéticas de Gofio)

Ingredients

  • 1 cup of gofio
  • 1/2 cup of dried fruits (such as raisins, apricots, or dates)
  • 1/2 cup of nuts (such as almonds, walnuts, or peanuts)
  • 1/4 cup of honey or agave syrup
  • 1/4 cup of nut butter (such as almond or peanut butter)
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt

Instructions

  1. In a food processor, combine the dried fruits and nuts. Pulse until finely chopped.
  2. In a large bowl, mix the gofio, chopped fruits and nuts, honey or agave syrup, nut butter, cinnamon, and salt until well combined.
  3. Press the mixture firmly into a lined baking dish and refrigerate for at least 1 hour.
  4. Cut into bars and store in an airtight container in the refrigerator.
