Gogji Raazma (गोग्जी राजमा)
गोग्जी राजमा (Gogji Raazma) is a traditional Kashmiri dish made with turnips and kidney beans, cooked in a flavorful gravy. This vegetarian dish is a staple in Kashmiri cuisine and is perfect for a hearty meal.
Ingredients
- 1 cup kidney beans, soaked overnight
- 2 medium-sized turnips, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Pressure cook the soaked kidney beans until tender.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Add turmeric, red chili powder, coriander powder, and salt. Cook the masala for a few minutes.
- Add the diced turnips and sauté for 5 minutes.
- Add the cooked kidney beans along with the water and mix well. Let it simmer for 15-20 minutes.
- Sprinkle garam masala and garnish with fresh coriander leaves.
- गोग्जी राजमा (Gogji Raazma) is ready to be served hot with steamed rice or naan.
