Golden Bozo with Wheat (Бозо с пшеницей)
Bozo с пшеницей (Golden Bozo with Wheat) is a traditional Kyrgyz drink made from fermented wheat and millet. It is a popular beverage enjoyed during special occasions and gatherings.
Ingredients
- 2 cups wheat
- 1 cup millet
- 1.5 cups sugar
- 10 cups water
Instructions
- Rinse the wheat and millet thoroughly.
- In a large pot, combine the rinsed wheat, millet, and water.
- Bring the mixture to a boil, then reduce the heat and simmer for 2 hours, stirring occasionally.
- After 2 hours, add the sugar and continue to simmer for another hour.
- Remove the pot from the heat and let the bozo cool to room temperature.
- Strain the bozo through a fine-mesh sieve to remove the wheat and millet solids.
- Pour the strained bozo into a clean container and refrigerate until chilled.
- Serve the bozo cold and enjoy!
