Golden Lotus Fried Rice

Ingredients

  • 3 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  3. Push the vegetables to the side of the wok, then pour the beaten eggs into the empty space.
  4. Scramble the eggs until they are cooked through, then mix them with the vegetables.
  5. Add the remaining vegetable oil and the cooked rice to the wok, stirring to combine with the vegetables and eggs.
  6. Drizzle the soy sauce and sesame oil over the rice, then sprinkle with salt and white pepper. Stir-fry for another 2-3 minutes.
  7. Add the chopped green onions and stir-fry for an additional minute.
  8. Remove from heat and serve hot.
