Ingredients
- 3 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 eggs, beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 green onions, chopped
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
- Push the vegetables to the side of the wok, then pour the beaten eggs into the empty space.
- Scramble the eggs until they are cooked through, then mix them with the vegetables.
- Add the remaining vegetable oil and the cooked rice to the wok, stirring to combine with the vegetables and eggs.
- Drizzle the soy sauce and sesame oil over the rice, then sprinkle with salt and white pepper. Stir-fry for another 2-3 minutes.
- Add the chopped green onions and stir-fry for an additional minute.
- Remove from heat and serve hot.
