Golden Lotus Tofu Soup

Ingredients

  • 1 block of firm tofu, cubed
  • 4 cups vegetable broth
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup sliced bamboo shoots
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1/4 teaspoon white pepper
  • 2 green onions, thinly sliced

Instructions

  1. In a pot, bring the vegetable broth to a boil.
  2. Add the tofu, shiitake mushrooms, bamboo shoots, soy sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper to the pot.
  3. Simmer for 15 minutes, stirring occasionally.
  4. Garnish with green onions before serving.
