Ingredients
- 1 block of firm tofu, cubed
- 4 cups vegetable broth
- 1 cup sliced shiitake mushrooms

- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- 1/4 teaspoon white pepper
- 2 green onions, thinly sliced
Instructions
- In a pot, bring the vegetable broth to a boil.
- Add the tofu, shiitake mushrooms, bamboo shoots, soy sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper to the pot.
- Simmer for 15 minutes, stirring occasionally.
- Garnish with green onions before serving.
