Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 4 slices of Chinese ham
  • 1 cup bamboo shoots, sliced
  • 8 cups chicken broth
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 eggs, beaten
  • 2 tablespoons cornstarch dissolved in 3 tablespoons water
  • 2 green onions, thinly sliced

Instructions

  1. Place the chicken thighs, Chinese ham, and bamboo shoots in a large pot.
  2. Pour in the chicken broth, Shaoxing wine, soy sauce, sugar, salt, and white pepper.
  3. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes, or until the chicken is tender.
  4. Remove the chicken thighs from the soup and shred the meat, discarding the bones and skin.
  5. Return the shredded chicken to the pot and bring the soup back to a simmer.
  6. Stir in the cornstarch mixture and cook until the soup has thickened slightly.
  7. Slowly pour in the beaten eggs while stirring the soup gently.
  8. Turn off the heat and stir in the green onions.
  9. Serve the Golden Phoenix Soup hot and enjoy!
