Ingredients
- 1 whole golden pomfret, cleaned and scaled
- 3 cloves garlic, minced
- 2 inches ginger, julienned
- 2 tomatoes, sliced
- 2 red chili peppers, sliced
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 1/4 cup water
- Salt to taste
- Chopped scallions for garnish
Instructions
- Score the pomfret on both sides and season with salt.
- Heat oil in a pan and fry the pomfret until golden brown. Remove and set aside.
- In the same pan, sauté garlic and ginger until fragrant.
- Add tomatoes, chili peppers, soy sauce, rice vinegar, sugar, and water. Simmer for 5 minutes.
- Return the pomfret to the pan and spoon the sauce over the fish. Cover and cook for another 10 minutes.
- Garnish with chopped scallions before serving.
