Golden Spanakopita (Χρυσή σπανακόπιτα)

Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, melted
  • 12 sheets phyllo dough

Instructions

  1. In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, dill, mint, green onions, eggs, nutmeg, salt, and pepper. Mix well.
  2. Preheat the oven to 350°F (175°C).
  3. Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo dough in the dish and brush with melted butter. Repeat with 5 more sheets of phyllo, brushing each sheet with butter.
  4. Spoon the spinach mixture over the phyllo layers and spread evenly.
  5. Layer the remaining 6 sheets of phyllo over the spinach mixture, brushing each sheet with melted butter.
  6. Score the top layer of phyllo into squares or triangles using a sharp knife.
  7. Bake in the preheated oven for 45 minutes, or until the phyllo is golden brown and crispy.
  8. Allow to cool for a few minutes, then cut into portions and serve.
