Golubtsi (cossack Cabbage Rolls)
Golubtsi, also known as Cossack Cabbage Rolls, are a traditional dish in Cossack cuisine. These savory rolls are made with tender cabbage leaves wrapped around a flavorful filling, creating a comforting and hearty meal.
Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 ounces) tomato sauce
- 1/4 cup brown sugar
- 2 tablespoons lemon juice
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a mixing bowl, combine the ground beef, cooked rice, chopped onion, egg, salt, and black pepper. Mix until well combined.
- Place a spoonful of the beef mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- In a separate bowl, mix together the tomato sauce, brown sugar, and lemon juice. Pour half of the sauce into the bottom of a large pot.
- Arrange the cabbage rolls in the pot, then pour the remaining sauce over the top.
- Cover and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
