Golubtsi (stuffed Cabbage Rolls)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 can (15 oz) tomato sauce
  • 1 cup beef or vegetable broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
  2. In a mixing bowl, combine the ground beef, cooked rice, onion, garlic, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Place a spoonful of the beef mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
  4. In a separate bowl, mix together the tomato sauce and broth. Pour the mixture over the cabbage rolls in the pot.
  5. Cover the pot and simmer the golubtsi over low heat for 45-50 minutes, until the cabbage is tender and the filling is cooked through.
  6. Serve the golubtsi hot, spooning the tomato sauce over the top.
