Golubtsi (zesty Cabbage Rolls)

Golubtsi, also known as zesty cabbage rolls, are a popular dish in Tajik cuisine. These delicious rolls are made with a flavorful filling wrapped in tender cabbage leaves and cooked to perfection.

Golubtsi (zesty Cabbage Rolls)

Ingredients

  • 1 large head of cabbage
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. Cook the rice according to package instructions and set aside.
  3. In a large bowl, mix the cooked rice, ground beef, onion, carrot, diced tomatoes, tomato paste, lemon juice, parsley, salt, and pepper.
  4. Place a spoonful of the filling onto each cabbage leaf and roll them up, tucking in the sides as you go.
  5. Place the cabbage rolls in a large pot, seam side down. Pour any remaining filling mixture over the rolls.
  6. Add enough water to the pot to cover the cabbage rolls. Cover and simmer over low heat for 1 hour.
  7. Serve the golubtsi hot, garnished with additional parsley if desired.
