Golubtsi (zesty Cabbage Rolls)
Golubtsi, also known as zesty cabbage rolls, are a popular dish in Tajik cuisine. These delicious rolls are made with a flavorful filling wrapped in tender cabbage leaves and cooked to perfection.
Ingredients
- 1 large head of cabbage
- 1 cup rice
- 1 lb ground beef
- 1 onion, finely chopped
- 1 carrot, grated
- 1 can (14 oz) diced tomatoes
- 1/4 cup tomato paste
- 1/4 cup lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- Cook the rice according to package instructions and set aside.
- In a large bowl, mix the cooked rice, ground beef, onion, carrot, diced tomatoes, tomato paste, lemon juice, parsley, salt, and pepper.
- Place a spoonful of the filling onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the cabbage rolls in a large pot, seam side down. Pour any remaining filling mixture over the rolls.
- Add enough water to the pot to cover the cabbage rolls. Cover and simmer over low heat for 1 hour.
- Serve the golubtsi hot, garnished with additional parsley if desired.
