Golubtsy (stuffed Cabbage Rolls)
Golubtsy, also known as stuffed cabbage rolls, is a traditional dish in Mordovian cuisine. These delicious rolls are made by wrapping seasoned ground meat and rice in tender cabbage leaves and simmering them in a flavorful tomato sauce.
Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 3-4 minutes, then carefully remove the softened outer leaves. Repeat until you have about 12 large leaves. Set aside.
- In a large bowl, combine the ground beef, rice, onion, egg, salt, and pepper. Mix until well combined.
- Place a spoonful of the meat mixture onto the center of each cabbage leaf. Roll the leaf, tucking in the sides, to form a tight roll.
- In a separate bowl, mix together the tomato sauce, diced tomatoes, brown sugar, and lemon juice.
- Place the cabbage rolls in a large pot or Dutch oven. Pour the tomato mixture over the rolls, covering them completely.
- Cover the pot and simmer over low heat for 1 hour, or until the cabbage is tender and the meat is fully cooked.
- Serve the golubtsy hot, spooning the tomato sauce over the top.

Tips & tricks
To make the cabbage leaves easier to roll, you can also freeze the whole head of cabbage for a few days before cooking. This will soften the leaves and make them more pliable.
