Golubtsy (stuffed Cabbage Rolls)

Golubtsy, also known as stuffed cabbage rolls, is a traditional dish in Mordovian cuisine. These delicious rolls are made by wrapping seasoned ground meat and rice in tender cabbage leaves and simmering them in a flavorful tomato sauce.

Golubtsy (stuffed Cabbage Rolls)

Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 3-4 minutes, then carefully remove the softened outer leaves. Repeat until you have about 12 large leaves. Set aside.
  2. In a large bowl, combine the ground beef, rice, onion, egg, salt, and pepper. Mix until well combined.
  3. Place a spoonful of the meat mixture onto the center of each cabbage leaf. Roll the leaf, tucking in the sides, to form a tight roll.
  4. In a separate bowl, mix together the tomato sauce, diced tomatoes, brown sugar, and lemon juice.
  5. Place the cabbage rolls in a large pot or Dutch oven. Pour the tomato mixture over the rolls, covering them completely.
  6. Cover the pot and simmer over low heat for 1 hour, or until the cabbage is tender and the meat is fully cooked.
  7. Serve the golubtsy hot, spooning the tomato sauce over the top.

Tips & tricks
