Golubtsy (tangy Cabbage Rolls)
Golubtsy, also known as Tangy Cabbage Rolls, are a traditional dish in Tatar cuisine. These delicious rolls are made with a flavorful filling wrapped in tender cabbage leaves and simmered in a tangy tomato sauce.
Ingredients
- 1 large head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 oz) tomato sauce
- 2 tablespoons vinegar
- 2 tablespoons brown sugar
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
- In a large bowl, combine the ground beef, cooked rice, chopped onion, egg, salt, and black pepper. Mix until well combined.
- Place a spoonful of the beef mixture onto each cabbage leaf. Roll the leaf, tucking in the sides, to create a neat roll. Repeat with the remaining leaves and filling.
- In a separate bowl, mix together the tomato sauce, vinegar, and brown sugar to create the tangy sauce.
- Place the cabbage rolls in a large pot and pour the tangy sauce over them. Cover the pot and simmer over low heat for 1 hour, or until the cabbage rolls are tender and the filling is cooked through.
