Golumpki (stuffed Cabbage Rolls)

Golumpki, also known as stuffed cabbage rolls, is a traditional dish in Bukharan Jewish Cuisine. These delicious rolls are filled with a savory mixture of ground meat, rice, and spices, then simmered in a flavorful tomato sauce.

Golumpki (stuffed Cabbage Rolls)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) tomato sauce
  • 1/4 cup brown sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 3-4 minutes, then remove the cabbage and let it cool.
  3. In a large bowl, mix together the ground beef, cooked rice, onion, garlic, paprika, salt, and black pepper.
  4. Gently peel off the cabbage leaves, being careful not to tear them. Place a spoonful of the meat mixture onto each leaf and roll it up, tucking in the sides as you go.
  5. Place the cabbage rolls seam side down in a large pot or Dutch oven.
  6. In a separate bowl, mix together the tomato sauce, brown sugar, and lemon juice. Pour the mixture over the cabbage rolls.
  7. Cover the pot and simmer over low heat for 1 hour.
  8. Serve the golumpki hot, spooning some of the tomato sauce over each roll.
