Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound fresh mushrooms, sliced
- 4 cups vegetable broth
- 1 teaspoon paprika
- 1 cup sour cream
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the mushrooms to the pot and cook until they release their liquid and become tender.
- Pour in the vegetable broth and stir in the paprika. Simmer for 15 minutes.
