Gombaleves (transylvanian Mushroom Soup)
Gombaleves, also known as Transylvanian Mushroom Soup, is a traditional dish from Transylvanian Saxon cuisine. This hearty and flavorful soup is perfect for a cozy meal on a cold day.
Ingredients
- 500g fresh mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 liter vegetable broth
- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the sliced mushrooms to the pot and cook until they release their liquid and become tender.
- Pour in the vegetable broth and bring the soup to a simmer. Cook for 15-20 minutes.
- Stir in the sour cream and season with salt and pepper to taste.
- Serve the gombaleves hot, garnished with fresh parsley.
