Ingredients

  • 500g fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 liter vegetable broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the sliced mushrooms to the pot and cook until they release their liquid and become tender.
  4. Pour in the vegetable broth and bring the soup to a simmer. Cook for 15-20 minutes.
  5. Stir in the sour cream and season with salt and pepper to taste.
  6. Serve the gombaleves hot, garnished with fresh parsley.
