Gombo Curry (lamb And Okra Curry)

Ingredients
- 1 lb (450g) lamb, cut into cubes
- 1 lb (450g) fresh okra, trimmed and sliced
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 tbsp (30ml) vegetable oil
- 2 tsp (10g) curry powder
- 1 tsp (5g) ground cumin
- 1 tsp (5g) ground coriander
- 1/2 tsp (3g) cayenne pepper
- Salt and pepper to taste
- 2 cups (480ml) chicken or vegetable broth
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and cook for another 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cover the pot and cook for 45 minutes, or until the lamb is tender.
- Add the sliced okra to the pot and cook for an additional 10 minutes, or until the okra is tender.
- Season the curry with salt and pepper to taste. Garnish with fresh cilantro before serving.
