Gombo Curry (lamb And Okra Curry)

Ingredients

  • 1 lb (450g) lamb, cut into cubes
  • 1 lb (450g) fresh okra, trimmed and sliced
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp (30ml) vegetable oil
  • 2 tsp (10g) curry powder
  • 1 tsp (5g) ground cumin
  • 1 tsp (5g) ground coriander
  • 1/2 tsp (3g) cayenne pepper
  • Salt and pepper to taste
  • 2 cups (480ml) chicken or vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and cook for another 5 minutes, stirring occasionally.
  5. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cover the pot and cook for 45 minutes, or until the lamb is tender.
  6. Add the sliced okra to the pot and cook for an additional 10 minutes, or until the okra is tender.
  7. Season the curry with salt and pepper to taste. Garnish with fresh cilantro before serving.
