Ingredients

  • 1/2 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
  3. Add the tomatoes and cook until they soften.
  4. Add the okra and smoked fish. Stir well to combine.
  5. Cover the skillet and let the gombo cook for 20-25 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot.
