Ingredients
- 1 lb okra, sliced
- 1 cup smoked fish, flaked
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1/2 cup vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
- Add the tomatoes and cook until they soften.
- Add the okra and smoked fish. Stir well to combine.
- Cover the skillet and let the gombo cook for 20-25 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
