Gombo Tajine (lamb And Okra Tagine)
Gombo Tajine, also known as Lamb and Okra Tagine, is a traditional dish from Malian cuisine that is rich in flavors and spices. This slow-cooked stew is perfect for a comforting and hearty meal.
Ingredients
- 1 lb lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 2 cups okra, trimmed and halved
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- Add the chopped onion to the pot and sauté until it becomes translucent. Add the minced garlic and cook for another minute.
- Stir in the ground cumin, coriander, cinnamon, and cayenne pepper. Cook for a few minutes to toast the spices.
- Return the browned lamb to the pot. Add the diced tomatoes and chicken broth. Season with salt and pepper. Bring to a simmer, then reduce the heat to low, cover, and cook for 1 hour.
- Add the halved okra to the pot and continue to cook, covered, for another 30-40 minutes, or until the lamb is tender and the okra is cooked through.
- Adjust the seasoning if needed and serve the Gombo Tajine hot with couscous or crusty bread.
