Gomtang
Gomtang is a traditional Korean soup made with beef bones and brisket. It is a hearty and comforting dish that is perfect for cold weather.
Ingredients
- 4 lbs beef bones
- 1 lb beef brisket
- 1 onion, chopped
- 6 garlic cloves
- 1 ginger root, sliced
- 8 cups water
- Salt and pepper to taste
Instructions
- Place beef bones and brisket in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours, skimming off any foam that rises to the surface.
- Add onion, garlic, and ginger to the pot and continue to simmer for an additional hour.
- Remove the beef brisket, slice it thinly, and set aside.
- Strain the broth and discard the solids. Season with salt and pepper to taste.
- Serve the gomtang in bowls, topped with the sliced beef brisket.
