Gon Dou Fu, or Braised Pomfret with Tofu, is a classic dish in Chiuchow Cuisine that combines the delicate flavor of pomfret with the smooth texture of tofu. This dish is known for its savory and aromatic sauce that complements the tender fish and tofu perfectly.
Ingredients
- 1 whole pomfret, cleaned and scaled
- 1 block firm tofu, cut into cubes
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the pomfret with salt and pepper.
- Heat vegetable oil in a pan over medium heat and pan-fry the pomfret until golden brown on both sides. Remove and set aside.
- In the same pan, add garlic, ginger, and green onions. Sauté until fragrant.
- Add the soy sauce, oyster sauce, Shaoxing wine, and sugar. Stir well.
- Pour in the chicken broth and bring to a simmer.
- Gently add the tofu and pomfret back into the pan. Cover and simmer for 15-20 minutes until the fish is cooked through.
- Adjust seasoning with salt and pepper if needed.
- Transfer to a serving dish and garnish with additional green onions.
