Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into small cubes
  • 1/2 cup unsalted peanuts
  • 3-4 dried red chilies, deseeded and cut into small pieces
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 3 green onions, chopped
  • 2 tbsp cooking oil

Instructions

  1. Marinate the chicken with soy sauce, Shaoxing wine, and cornstarch for 10 minutes.
  2. Heat the cooking oil in a wok or large skillet over high heat.
  3. Add the dried red chilies, garlic, and ginger. Stir-fry until fragrant.
  4. Add the marinated chicken and stir-fry until cooked through.
  5. Add the peanuts and continue to stir-fry until everything is well combined.
  6. Garnish with chopped green onions and serve hot.
