Gong Bao Spiced Tofu Stir-Fry (宫保麻辣豆腐炒)

Ingredients

  • 1 block (14 oz) firm tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3-4 dried red chilies
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 3 green onions, chopped
  • 1/4 cup roasted peanuts
  • For the sauce:
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp sugar
  • 1 tbsp Sichuan peppercorns

Instructions

  1. Press the tofu between paper towels to remove excess moisture.
  2. Heat 1 tbsp of oil in a wok over high heat. Add the tofu cubes and stir-fry until golden. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok and add the dried chilies, garlic, and ginger. Stir-fry until fragrant.
  4. Add the green onions and roasted peanuts to the wok. Stir-fry for another minute.
  5. Return the tofu to the wok and pour in the sauce. Stir-fry until everything is well coated and heated through.
  6. Serve hot and enjoy!
