宫保麻辣豆腐炒 (Gong Bao Spiced Tofu Stir-Fry) is a classic Sichuan dish known for its bold flavors and spicy kick. This vegetarian stir-fry is a perfect balance of heat, sweetness, and umami, making it a popular choice for those who love Sichuan cuisine.
Ingredients
- 1 block (14 oz) firm tofu, cut into cubes
- 2 tbsp vegetable oil
- 3-4 dried red chilies
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 3 green onions, chopped
- 1/4 cup roasted peanuts
- For the sauce:
- 2 tbsp soy sauce
- 1 tbsp Chinese black vinegar
- 1 tbsp sugar
- 1 tbsp Sichuan peppercorns
Instructions
- Press the tofu between paper towels to remove excess moisture.
- Heat 1 tbsp of oil in a wok over high heat. Add the tofu cubes and stir-fry until golden. Remove from the wok and set aside.
- Heat the remaining oil in the wok and add the dried chilies, garlic, and ginger. Stir-fry until fragrant.
- Add the green onions and roasted peanuts to the wok. Stir-fry for another minute.
- Return the tofu to the wok and pour in the sauce. Stir-fry until everything is well coated and heated through.
- Serve hot and enjoy!
