Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup roasted peanuts
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon dried chili flakes

Instructions

  1. In a small bowl, mix together soy sauce, rice vinegar, honey, and cornstarch. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add Sichuan peppercorns and dried chili flakes, and stir-fry for 30 seconds.
  3. Add shrimp, garlic, and ginger to the wok. Stir-fry for 2-3 minutes until the shrimp turn pink.
  4. Pour in the soy sauce mixture and cook until the sauce thickens, about 2 minutes.
  5. Stir in roasted peanuts and chopped green onions. Cook for an additional 1-2 minutes.
  6. Remove from heat and transfer to a serving dish.
