Goong Larb (spicy Shrimp Salad)
Goong Larb is a traditional Lao spicy shrimp salad that is bursting with flavors and textures. This dish is perfect for those who love a little heat and a lot of freshness in their meals.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 2 tablespoons fish sauce
- 3 tablespoons lime juice
- 1 tablespoon roasted rice powder
- 1 teaspoon chili flakes
- 1/2 cup thinly sliced shallots
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh lemongrass
- 1/4 cup chopped fresh kaffir lime leaves
- 1/4 cup chopped fresh Thai chilies
- 1 head of lettuce, for serving
Instructions
- In a large bowl, combine the fish sauce, lime juice, roasted rice powder, and chili flakes. Mix well and set aside.
- Heat a skillet over medium heat and cook the shrimp for 2-3 minutes, or until they turn pink and opaque. Remove from heat and let them cool slightly.
- Chop the cooked shrimp into bite-sized pieces and add them to the bowl with the dressing.
- Add the shallots, green onions, cilantro, mint, lemongrass, kaffir lime leaves, and Thai chilies to the bowl. Toss everything together until well combined.
- Transfer the shrimp salad to a serving platter and serve with lettuce leaves on the side.
