Goong Larb (spicy Shrimp Salad)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 tablespoon roasted rice powder
  • 1 teaspoon chili flakes
  • 1/2 cup thinly sliced shallots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh lemongrass
  • 1/4 cup chopped fresh kaffir lime leaves
  • 1/4 cup chopped fresh Thai chilies
  • 1 head of lettuce, for serving

Instructions

  1. In a large bowl, combine the fish sauce, lime juice, roasted rice powder, and chili flakes. Mix well and set aside.
  2. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes, or until they turn pink and opaque. Remove from heat and let them cool slightly.
  3. Chop the cooked shrimp into bite-sized pieces and add them to the bowl with the dressing.
  4. Add the shallots, green onions, cilantro, mint, lemongrass, kaffir lime leaves, and Thai chilies to the bowl. Toss everything together until well combined.
  5. Transfer the shrimp salad to a serving platter and serve with lettuce leaves on the side.
