Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 cup pineapple chunks
  • 3 tablespoons sweet and sour sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the garlic and stir-fry for 30 seconds until fragrant.
  3. Add the shrimp and stir-fry for 2-3 minutes until they turn pink and opaque.
  4. Push the shrimp to one side of the wok and add the bell pepper and onion. Stir-fry for 2-3 minutes until slightly softened.
  5. In a small bowl, mix together the sweet and sour sauce, soy sauce, fish sauce, sugar, cornstarch, and water. Pour the mixture over the shrimp and vegetables in the wok.
  6. Add the pineapple chunks and stir-fry for another 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot with steamed rice.
