Gorkhali Lamb Curry

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 tomatoes, pureed
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  4. Add the lamb cubes and cook until browned on all sides.
  5. Stir in the tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  6. Cover and simmer for 45-50 minutes or until the lamb is tender.
  7. Sprinkle garam masala and garnish with fresh cilantro before serving.
