Gosht Kalia (spiced Beef Curry)

Ingredients

  • 1.5 lbs beef, cut into cubes
  • 2 onions, finely sliced
  • 3-4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 2 tbsp ghee or oil
  • 1 cinnamon stick
  • 4-5 green cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat ghee or oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the beef cubes and brown them on all sides.
  5. Stir in the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook for 5 minutes.
  6. Whisk the yogurt and add it to the pot, stirring continuously to avoid curdling.
  7. Pour in enough water to cover the beef, then cover and simmer for 1 hour or until the beef is tender.
  8. Garnish with fresh cilantro and serve hot with steamed rice or naan.
