Gosht Korma (awadhi Mutton Korma)
Gosht Korma, also known as Awadhi Mutton Korma, is a rich and aromatic dish from the Awadhi cuisine of India. This slow-cooked mutton korma is flavored with a blend of spices and enriched with creamy yogurt, making it a perfect indulgence for special occasions.
Ingredients
- 500g mutton, cut into pieces
- 1 cup yogurt
- 2 onions, finely sliced
- 2 tbsp ghee
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp nutmeg powder
- 1/2 cup cashew nuts, soaked and ground to a paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a heavy-bottomed pan and sauté the onions until golden brown.
- Add the ginger and garlic, and cook until the raw smell disappears.
- Add the mutton pieces and sauté until they are browned.
- Stir in the turmeric, red chili powder, coriander powder, and garam masala.
- Whisk the yogurt and add it to the pan, stirring continuously.
- Pour in the cashew nut paste and mix well.
- Add nutmeg powder and salt, then cover and cook on low heat until the mutton is tender.
- Garnish with fresh coriander leaves before serving.
