Gosht Korma (mutton Korma)
Gosht Korma, also known as Mutton Korma, is a classic North Indian dish known for its rich and aromatic flavors. This creamy and indulgent curry is made with tender mutton pieces cooked in a flavorful blend of spices, yogurt, and nuts.
Ingredients
- 500g mutton, cut into pieces
- 1 cup yogurt
- 2 onions, finely sliced
- 1/4 cup ghee (clarified butter)
- 1/2 cup cashew nuts
- 1/4 cup almonds
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 4 green cardamom pods
- 2 black cardamom pods
- 4 cloves
- 1-inch cinnamon stick
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a large pot and add the cumin seeds, green cardamom, black cardamom, cloves, and cinnamon. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Add the mutton pieces and ginger-garlic paste. Cook until the mutton is browned.
- In a blender, grind the cashew nuts and almonds with a little water to form a smooth paste.
- Whisk the yogurt and add it to the pot, followed by the nut paste, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Cover and cook on low heat until the mutton is tender, stirring occasionally.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
