Gosht Korma, also known as Mutton Korma, is a classic North Indian dish known for its rich and aromatic flavors. This creamy and indulgent curry is made with tender mutton pieces cooked in a flavorful blend of spices, yogurt, and nuts.

Ingredients

  • 500g mutton, cut into pieces
  • 1 cup yogurt
  • 2 onions, finely sliced
  • 1/4 cup ghee (clarified butter)
  • 1/2 cup cashew nuts
  • 1/4 cup almonds
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 4 green cardamom pods
  • 2 black cardamom pods
  • 4 cloves
  • 1-inch cinnamon stick
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a large pot and add the cumin seeds, green cardamom, black cardamom, cloves, and cinnamon. Sauté until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Add the mutton pieces and ginger-garlic paste. Cook until the mutton is browned.
  4. In a blender, grind the cashew nuts and almonds with a little water to form a smooth paste.
  5. Whisk the yogurt and add it to the pot, followed by the nut paste, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Cover and cook on low heat until the mutton is tender, stirring occasionally.
  7. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
