Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 red bell peppers, sliced
  • 3 tbsp sweet paprika
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef cubes and brown them on all sides. Remove the beef and set aside.
  3. Add the onions, garlic, and red bell peppers to the pot. Cook until softened.
  4. Stir in the sweet paprika and tomato paste, and cook for 2 minutes.
  5. Return the beef to the pot and pour in the beef broth and red wine. Add the bay leaves and season with salt and pepper.
  6. Bring the goulash to a simmer, then reduce the heat to low. Cover and cook for 2.5 to 3 hours, or until the beef is tender.
