Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 red bell peppers, sliced
- 3 tbsp sweet paprika
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 cup red wine
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Add the beef cubes and brown them on all sides. Remove the beef and set aside.
- Add the onions, garlic, and red bell peppers to the pot. Cook until softened.
- Stir in the sweet paprika and tomato paste, and cook for 2 minutes.
- Return the beef to the pot and pour in the beef broth and red wine. Add the bay leaves and season with salt and pepper.
- Bring the goulash to a simmer, then reduce the heat to low. Cover and cook for 2.5 to 3 hours, or until the beef is tender.
- Adjust the seasoning if needed, then serve the goulash hot, accompanied by crusty bread or over buttered noodles.
