Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 2 onions, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces Brie cheese, rind removed and diced
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes.
- Meanwhile, finely chop the reserved mushroom stems.
- Preheat the oven to 375°F (190°C).
- Once the onions are caramelized, remove the skillet from the heat and let them cool slightly.
- In a bowl, combine the caramelized onions, chopped mushroom stems, diced Brie, and parsley. Mix well.
- Place the mushroom caps on a baking sheet, gill side up. Spoon the onion and Brie mixture into each mushroom cap.
- Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
