Gower's Caramelized Onion And Goat Cheese Tart

Ingredients

  • 1 pre-made pie crust
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 4 oz goat cheese, crumbled
  • 2 eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Press the pie crust into a 9-inch tart pan and set aside.
  3. In a large skillet, melt the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until caramelized, about 20 minutes.
  4. Stir in the balsamic vinegar and brown sugar, and continue cooking for another 5 minutes. Remove from heat and let cool slightly.
  5. In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  6. Sprinkle the crumbled goat cheese over the bottom of the tart crust. Spread the caramelized onions on top of the goat cheese.
  7. Pour the egg mixture over the onions and cheese.
  8. Bake for 25-30 minutes, or until the tart is set and the crust is golden brown.
  9. Let the tart cool for a few minutes before slicing and serving.
