Ingredients
- 1 pre-made pie crust
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup brown sugar
- 4 oz goat cheese, crumbled
- 2 eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Press the pie crust into a 9-inch tart pan and set aside.
- In a large skillet, melt the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until caramelized, about 20 minutes.
- Stir in the balsamic vinegar and brown sugar, and continue cooking for another 5 minutes. Remove from heat and let cool slightly.
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Sprinkle the crumbled goat cheese over the bottom of the tart crust. Spread the caramelized onions on top of the goat cheese.
- Pour the egg mixture over the onions and cheese.
- Bake for 25-30 minutes, or until the tart is set and the crust is golden brown.
- Let the tart cool for a few minutes before slicing and serving.
