Gower's Moroccan Lamb Tagine

Ingredients
- 1.5 lbs lamb shoulder, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup chicken or vegetable broth
- 1/2 cup dried apricots, halved
- 1/4 cup sliced almonds
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large tagine or Dutch oven, heat some oil over medium-high heat. Brown the lamb in batches and set aside.
- Reduce the heat to medium and sauté the onion and garlic until softened.
- Add the spices and cook for 1-2 minutes until fragrant.
- Return the lamb to the pot and add the diced tomatoes, broth, and apricots. Season with salt and pepper.
- Bring the mixture to a simmer, then cover and cook on low heat for 1.5-2 hours, or until the lamb is tender.
- Before serving, sprinkle the sliced almonds and fresh cilantro on top.
