Gower's Moroccan Lamb Tagine

Ingredients

  • 1.5 lbs lamb shoulder, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1/2 cup dried apricots, halved
  • 1/4 cup sliced almonds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large tagine or Dutch oven, heat some oil over medium-high heat. Brown the lamb in batches and set aside.
  2. Reduce the heat to medium and sauté the onion and garlic until softened.
  3. Add the spices and cook for 1-2 minutes until fragrant.
  4. Return the lamb to the pot and add the diced tomatoes, broth, and apricots. Season with salt and pepper.
  5. Bring the mixture to a simmer, then cover and cook on low heat for 1.5-2 hours, or until the lamb is tender.
  6. Before serving, sprinkle the sliced almonds and fresh cilantro on top.
