Gower's Spicy Sweet Potato And Lentil Curry

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is soft and translucent.
  2. Add the sweet potatoes, lentils, curry powder, cumin, turmeric, and cayenne pepper to the pot. Stir to coat the vegetables and lentils with the spices.
