Ingredients

  • 1 cup pitted dates, chopped
  • 1 1/4 cups boiling water
  • 1 teaspoon baking soda
  • 1/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking dish.
  2. In a bowl, pour the boiling water over the chopped dates and stir in the baking soda. Let it sit for 5 minutes.
  3. In a separate bowl, cream together the butter and sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  5. Stir in the date mixture until evenly distributed. Pour the batter into the prepared baking dish.
  6. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
