Gower's Stuffed Peppers With Quinoa

Ingredients

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed
  • 1 ½ cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
  4. In a skillet, sauté the onion and garlic until softened.
  5. Add the diced tomatoes, cumin, paprika, chili powder, salt, and pepper to the skillet. Cook for 5 minutes.
  6. Stir in the cooked quinoa and mix well.
  7. Stuff the bell peppers with the quinoa mixture and place them in a baking dish. If using cheese, sprinkle it on top of the stuffed peppers.
  8. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
  9. Remove the foil and bake for an additional 5 minutes to melt the cheese (if using).
  10. Serve the stuffed peppers hot and enjoy!
