Ingredients
- 4 large bell peppers, any color
- 1 cup quinoa, rinsed
- 1 ½ cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
- In a skillet, sauté the onion and garlic until softened.
- Add the diced tomatoes, cumin, paprika, chili powder, salt, and pepper to the skillet. Cook for 5 minutes.
- Stir in the cooked quinoa and mix well.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish. If using cheese, sprinkle it on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 5 minutes to melt the cheese (if using).
- Serve the stuffed peppers hot and enjoy!
