Goya Champuru Spring Rolls
Goya Champuru Spring Rolls are a delightful fusion of Okinawan and Asian flavors, wrapped in a crispy spring roll wrapper. This recipe combines the classic Goya Champuru stir-fry with the convenience of a handheld spring roll, making it a perfect appetizer or snack.
Ingredients
- 12 spring roll wrappers
- 1 block firm tofu, drained and diced
- 1 small bitter melon (goya), thinly sliced
- 1/2 cup sliced pork belly or bacon
- 1/2 onion, thinly sliced
- 2 eggs, beaten
- 2 cups bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon cooking oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the cooking oil over medium heat. Add the pork belly (or bacon) and cook until slightly browned.
- Add the diced tofu and cook until lightly golden. Remove the pork belly and tofu from the skillet and set aside.
- In the same skillet, sauté the sliced bitter melon and onion until slightly softened.
- Add the bean sprouts and stir-fry for 1-2 minutes. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Return the pork belly and tofu to the skillet. Add soy sauce, mirin, salt, and pepper. Stir to combine all the ingredients. Remove from heat and let the filling cool.
- Place a spring roll wrapper on a clean surface. Spoon a portion of the filling onto the wrapper. Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edge with a bit of water.
- Heat oil in a deep skillet or pot. Fry the spring rolls in batches until golden brown and crispy. Drain on paper towels.
