Goya Champuru Spring Rolls

Goya Champuru Spring Rolls are a delightful fusion of Okinawan and Asian flavors, wrapped in a crispy spring roll wrapper. This recipe combines the classic Goya Champuru stir-fry with the convenience of a handheld spring roll, making it a perfect appetizer or snack.

Goya Champuru Spring Rolls

Ingredients

  • 12 spring roll wrappers
  • 1 block firm tofu, drained and diced
  • 1 small bitter melon (goya), thinly sliced
  • 1/2 cup sliced pork belly or bacon
  • 1/2 onion, thinly sliced
  • 2 eggs, beaten
  • 2 cups bean sprouts
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon cooking oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the cooking oil over medium heat. Add the pork belly (or bacon) and cook until slightly browned.
  2. Add the diced tofu and cook until lightly golden. Remove the pork belly and tofu from the skillet and set aside.
  3. In the same skillet, sauté the sliced bitter melon and onion until slightly softened.
  4. Add the bean sprouts and stir-fry for 1-2 minutes. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Return the pork belly and tofu to the skillet. Add soy sauce, mirin, salt, and pepper. Stir to combine all the ingredients. Remove from heat and let the filling cool.
  6. Place a spring roll wrapper on a clean surface. Spoon a portion of the filling onto the wrapper. Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edge with a bit of water.
  7. Heat oil in a deep skillet or pot. Fry the spring rolls in batches until golden brown and crispy. Drain on paper towels.
  8. Serve the Goya Champuru Spring Rolls with your favorite dipping sauce and enjoy!
