Goya Champuru Tacos
Goya Champuru Tacos are a fusion dish that combines the flavors of Okinawan cuisine with the convenience of a Mexican favorite. This recipe brings together the bitterness of goya (bitter melon), the umami of spam, and the freshness of vegetables, all wrapped in a warm tortilla. Ingredients
- 1 goya (bitter melon), thinly sliced
- 1 can of spam, diced
- 1/2 onion, thinly sliced
- 1 tomato, diced
- 4 eggs
- 4 tortillas
- Salt and pepper to taste
- 1 tablespoon vegetable oil
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the sliced goya and cook for 3-4 minutes until slightly softened.
- Add the diced spam and sliced onion to the pan. Cook for another 3-4 minutes until the spam is browned and the onion is translucent.
- Add the diced tomato to the pan and cook for 2-3 minutes until the tomato is softened.
- Push the ingredients to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked through.
- Combine the eggs with the rest of the ingredients in the pan. Season with salt and pepper to taste.
- Warm the tortillas in a separate pan or microwave.
- Divide the goya champuru mixture among the tortillas.
- Wrap the tortillas and serve immediately.
