Goya Champuru Tacos

Ingredients

  • 1 goya (bitter melon), thinly sliced
  • 1 can of spam, diced
  • 1/2 onion, thinly sliced
  • 1 tomato, diced
  • 4 eggs
  • 4 tortillas
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the sliced goya and cook for 3-4 minutes until slightly softened.
  3. Add the diced spam and sliced onion to the pan. Cook for another 3-4 minutes until the spam is browned and the onion is translucent.
  4. Add the diced tomato to the pan and cook for 2-3 minutes until the tomato is softened.
  5. Push the ingredients to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked through.
  6. Combine the eggs with the rest of the ingredients in the pan. Season with salt and pepper to taste.
  7. Warm the tortillas in a separate pan or microwave.
  8. Divide the goya champuru mixture among the tortillas.
  9. Wrap the tortillas and serve immediately.
