Gram Flour Noodles in Tomato Curry, also known as Rajasthani Sev Tamatar ki Sabzi, is a traditional dish from the Rajasthani cuisine. This flavorful and spicy curry is made with gram flour noodles cooked in a tangy tomato gravy, making it a perfect accompaniment to steamed rice or Indian breads.

Gram Flour Noodles In Tomato Curry (rajasthani Sev Tamatar Ki Sabzi)

Ingredients

  • 2 cups gram flour (besan)
  • 4 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp asafoetida (hing)
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 3 tomatoes, pureed
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat 2 tbsp oil in a pan and add the gram flour. Roast the gram flour on low heat until it turns golden brown and aromatic. Keep stirring continuously to avoid burning. Once done, remove the roasted gram flour from the pan and keep it aside.
  2. In the same pan, heat the remaining 2 tbsp oil. Add cumin seeds and asafoetida. Once the seeds crackle, add the chopped onions and green chilies. Saute until the onions turn golden brown.
  3. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates from the masala.
  4. Now, add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for a couple of minutes.
  5. Pour 2 cups of water and bring the curry to a boil. Once it starts boiling, reduce the heat to low and let it simmer for 5 minutes.
  6. Add the roasted gram flour noodles (sev) to the curry and mix well. Let it simmer for another 5-7 minutes until the noodles absorb the flavors of the curry.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or Indian breads.
